- 1 (12-ounce) can SPAM® Classic, diced
- 4 teaspoons butter or margarine
- 1/4 teaspoon chili powder
- 8 large eggs
- 1 chopped large green bell pepper
- 2 thinly sliced medium onions
- 4 tablespoons milk
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- In a medium skillet, heat oil and sauté the bell pepper and onions until lightly browned.
- Stir in the SPAM® Classic and chili powder until well mixed.
- For each omelet, in a bowl, beat together 2 eggs, 1 tablespoon milk, 1/8 teaspoon salt, and black pepper.
- In an 8 or 9-inch omelet pan or skillet, melt 1 teaspoon of butter and pour in the egg mixture.
- Cook over medium heat, pushing the cooked edge of the omelet to center as the egg sets and tilting pan to allow the uncooked mixture to run to the edge.
- When the surface of the omelet is set, spoon 1/2 cup of the SPAM® mixture onto 1/2 of the omelet, then flip the uncovered half over the filling.
- Cook until the bottom of the omelet is browned.
