SPAM® Western Omelet

Ingredients
  • 1 (12-ounce) can SPAM® Classic, diced
  • 4 teaspoons butter or margarine
  • 1/4 teaspoon chili powder
  • 8 large eggs
  • 1 chopped large green bell pepper
  • 2 thinly sliced medium onions
  • 4 tablespoons milk
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
Directions
  1. In a medium skillet, heat oil and sauté the bell pepper and onions until lightly browned.
  2. Stir in the SPAM® Classic and chili powder until well mixed.
  3. For each omelet, in a bowl, beat together 2 eggs, 1 tablespoon milk, 1/8 teaspoon salt, and black pepper.
  4. In an 8 or 9-inch omelet pan or skillet, melt 1 teaspoon of butter and pour in the egg mixture.
  5. Cook over medium heat, pushing the cooked edge of the omelet to center as the egg sets and tilting pan to allow the uncooked mixture to run to the edge.
  6. When the surface of the omelet is set, spoon 1/2 cup of the SPAM® mixture onto 1/2 of the omelet, then flip the uncovered half over the filling.
  7. Cook until the bottom of the omelet is browned.
