- 1 (12-ounce) can SPAM® Jalapeño, diced or cut into thin strips
- 1 tablespoon olive oil
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/4 cup yellow onion, chopped
- 2 cups finely shredded Mexican blend cheese, divided
- 6 (10-inch) flour tortillas
- 3/4 cup softened cream cheese
- Sour cream, salsa, guacamole, fresh cilantro, and lime wedges for topping
- In a medium bowl, combine all the salsa ingredients, then set aside.
- Heat olive oil in a large skillet over medium-high heat.
- Add the onion and bell peppers. Sauté for 5-8 minutes or until lightly browned and softened, then remove from the skillet and set aside.
- In the same skillet, add the SPAM® Jalapeño and fry until lightly browned, or about 5 minutes.
- Return the onions and peppers to the skillet and stir to combine with the SPAM® Jalapeño.
- Spoon SPAM® Jalapeño mixture onto flour tortillas.
- Top with salsa and enjoy! If desired, substitute your favorite prepared fruit or tomato-based salsa for the Pineapple Salsa.
