- 1/4 cup finely chopped white onion
- 1/4 cup finely chopped fresh cilantro
- Juice from 1/2 of a lime
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1teaspoon Korean chili flake
- 1 cup thinly sliced green cabbage napa
- 1 cup thinly sliced romaine lettuce
- 1/2 cup sliced green onions
- 1 (12-ounce) can SPAM® Gochujang Flavored, cut into 8 slices
- 8 corn street tortillas, warmed
- Salsa verde
- Lime wedges, for serving
- In small bowl, combine onion, cilantro, and lime juice. Season to taste with salt and pepper. Reserve.
- In medium bowl, combine soy sauce, vinegar, sugar, sesame oil and chili flake. Add cabbage, lettuce and green onions. Toss to combine. Season to taste with salt and pepper.
- In large skillet over medium-high heat, cook slices 3 to 5 minutes or until browned and crisped. Remove from skillet to cutting board. Chop each slice into strips.
- To serve, fill tortillas with SPAM® Gochujang Flavored strips, and cabbage mixture. Top with onion cilantro mixture and salsa verde.
