Ingredients
  • 2 eggs, lightly beaten
  • 1½ teaspoons salt, divided
  • Dash white pepper
  • 2 tablespoons vegetable oil, divided
  • 1 (12-ounce) can SPAM® Less Sodium, diced
  • ½ cup small button mushrooms, quartered
  • 3 cups cooked white rice
  • 2 tablespoons light soy sauce
  • ½ cup frozen peas, thawed
  • 1 cup diced fresh pineapple
  • 2 green onions, with tops, chopped
Directions
  1. In small bowl, combine eggs, ½ teaspoon salt and white pepper. In skillet or wok over high heat, add 1 tablespoon oil and tilt to coat sides. Add eggs. Cook and stir until thickened throughout but still moist. Remove from skillet.
  2. Wipe out skillet. Heat remaining 1 tablespoon vegetable oil and tilt to coat sides. Add diced SPAM® Less Sodium. Stir-fry 2 to 3 minutes or until lightly browned. Add mushrooms. Stir-fry 1 to 2 minutes or until beginning to brown.
  3. Add rice. Stir-fry 2 minutes. Stir in soy sauce. Stir in eggs, peas, and remaining 1 teaspoon salt. Stir-fry 1 to 2 minutes or until mixture is hot. Stir in pineapple and green onions.

Wife said to add it to the menu, okay then. Cut the spam into 6 slices and fried to get that crisp then removed and diced. Returned spam to the pam then finished as recipe stated. Took suggestions of adding a "glob" of sweet chili sauce and it gave it that little zing. No need for white pepper with that, also didn't use any mushrooms.

I used 4 eggs to increase the protein, skipped the mushrooms, sauted the pineapple, sprinkled on some garlic powder and added a glob of sweet chili sauce. Other than that, I followed the recipe. One of my boys (age 7) had the leftovers for breakfast and lunch. He said it was his favorite food.

I made this last night and even my picky eaters liked it. I ran across this recipe one day and just happened to have a can of SPAM and some leftover fresh pineapple. I had regular SPAM instead of Low Sodium so left out the salt called for in the recipe. I was out of mushrooms so just skipped them. Followed everything else as written in the recipe with one addition. I added a couple of tablespoons of Mae Ploy sweet chili sauce. I cooked everything in a cast iron skillet and got a nice little sear to the SPAM. Thanks for posting this recipe.

This turned out very well. Of course I forgot to buy onions so added dried chives and some garlic powder (just because I like garlic with mushrooms) to the Spam/mushroom sautee. I was sidetracked with dicing so I slightly overcooked the eggs and they were dry when I added them back in, so will watch that next time. Overall a very good recipe that I will definitely add into the rotation!

Made this recipe per the instructions, and used regular Spam. It was delicious and a perfect compliment to our Tiki drinks. The only thing I would change is to cook the Spam and mushrooms before the rice to get those nice crispy edges on the Spam

I altered the recipe slightly, but still more or less the same Hawaiian Fried Rice. I omitted the mushrooms and used snow peas instead of frozen peas. Also added a little Thai Hot Chili Sauce to give it a little kick. Turned out yummy!
