SPAM® Gochujang Flavored Street Tacos

Ingredients
  • 1/4 cup finely chopped white onion
  • 1/4 cup finely chopped fresh cilantro
  • Juice from 1/2 of a lime
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 1teaspoon Korean chili flake
  • 1 cup thinly sliced green cabbage napa
  • 1 cup thinly sliced romaine lettuce
  • 1/2 cup sliced green onions
  • 1 (12-ounce) can SPAM® Gochujang Flavored, cut into 8 slices
  • 8 corn street tortillas, warmed
  • Salsa verde
  • Lime wedges, for serving
Directions
  1. In small bowl, combine onion, cilantro, and lime juice. Season to taste with salt and pepper. Reserve.
  2. In medium bowl,  combine soy sauce, vinegar, sugar, sesame oil and chili flake. Add cabbage, lettuce and green onions. Toss to combine. Season to taste with salt and pepper.
  3. In large skillet over medium-high heat, cook slices 3 to 5 minutes or until browned and crisped. Remove from skillet to cutting board. Chop each slice into strips.
  4. To serve, fill tortillas with SPAM® Gochujang Flavored strips, and cabbage mixture. Top with onion cilantro mixture and salsa verde.
