SPAM® Classic Mini Korean Corndogs

Ingredients
  • 1 (12-ounce) can SPAM® Classic cut lengthwise into 4 thick slices, each slice quartered to make 16 pieces
  • 8 ounces mozzarella cheese cut into 16 (1-inch x 2-inch) pieces
  • 1 1/4 cups flour
  • 1/4 cup sugar, divided
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 2 cups panko breadcrumbs
  • 2 cups crushed ramen noodles
  • Oil for deep frying
  • Sriracha Mayonnaise; recipe follows
  • Red Curry Coconut Sauce; recipe follows
  • Fresh cilantro

Sriracha Mayonnaise

  • 1/2 cup Japanese-style mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey

Red Curry Coconut Sauce

  • 1/4 cup coconut milk
  • 1/4 cup Japanese-style mayonnaise
  • 1 tablespoon red curry paste
  • Fresh chopped cilantro, if desired
Directions
  1. On each of 16 craft sticks skewer 1 SPAM® Classic piece and 1 cheese piece. Place on tray. Cover and refrigerate.
  2. In bowl, whisk together flour, 2 tablespoons sugar, baking powder and salt. Mix in egg and milk until thick and smooth. Batter should be on the thick.
  3. In large saucepan, heat oil over medium-high heat to 350°F. Place panko breadcrumbs in a shallow dish. Place crushed ramen noodles in another shallow dish.
  4. Dip SPAM® Classic sticks into batter, turning until coated. Immediately roll in breadcrumbs or noodles, until very well covered.
  5. Working in batches, gently drop battered SPAM® Classic sticks into hot oil. Fry 2 to 3 minutes or until golden brown. Remove to rack and sprinkle liberally with remaining sugar. Serve with Sriracha Mayonnaise and Red Curry Coconut Sauce. Garnish with cilantro.
