Ingredients

Gain Bowl

  • 1 (12-ounce) can SPAM® Maple Flavored, cubed
  • 2 cups cooked quinoa
  • 2 cups quartered, roasted brussels sprouts
  • 1 Gala apple, sliced
  • 1 cup dried cranberries
  • 1 cup chopped pecans, toasted
  • 1 small red onion, chopped
  • Maple Orange Vinaigrette; recipe follows

Maple Orange Vinaigrette

  • 2 tablespoons maple syrup
  • 2 tablespoons orange juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup olive oil
Directions

Gain Bowl

  1. In large skillet, over medium-high heat, cook cubed SPAM® Maple Flavored 3 to 5 minutes or until browned.
  2. Divide prepared SPAM® Maple Flavored cubes, quinoa, brussels sprouts, apple, cranberries, pecans and red onion among 4 individual serving bowls.
  3. Serve with Maple Orange Vinaigrette.

Maple Orange Vinaigrette

  1. Combine ingredients in small jar. Cover and shake to combine.

On a whim I bought a can of Maple Spam because I don't see it around that often, thinking of replacing breakfast sausage with Soam or something simple. I came across this recipe for more of a dinner entree, and it was soooooooo good…. The pickled onions were the underdogs, but everything like the Maple Spam and the orange maple vinegarette worked so darn well together. Very highly recommend trying this recipe! Not too hrd to cook either.
