Ingredients
- 1 (12-ounce) can SPAM® Less Sodium, cubed
Marinade
- 1 tablespoon soy sauce
- 1 tablespoon oil
- 1 teaspoon cornstarch
- ½ teaspoon baking soda
- ¼ teaspoon white pepper
Sauce
- 1 ½ tablespoons oyster sauce
- 1 ½ tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- ¼ teaspoon white pepper
Fried Rice
- 3 tablespoons oil, divided
- 1 onion, sliced
- 2 tablespoons garlic and chili sauce
- 4 cups cooked jasmine rice
- 1 cup packed Thai basil leaves
- 2 eggs, scrambled
Garnish
- Thai basil leaves
- Lime wedges
Directions
- In bowl, combine cubed SPAM® Less Sodium and Marinade ingredients. Marinate 15 minutes.
- In small bowl, combine Sauce ingredients.
- In large non-stick skillet over medium-high heat, heat 1 tablespoon oil. Cook marinated SPAM® Less Sodium cubes 3 to 4 minutes or until crisped and browned. Remove from skillet.
- In same skillet, heat remaining 2 tablespoons oil. Stir-fry onion 1 to 2 minutes. Add garlic and chili sauce. Stir-fry 15 seconds. Add rice to skillet. Stir-fry 3 to 4 minutes. Add Sauce. Stir-fry 1 to 2 minutes. Return browned SPAM® Less Sodium cubes to skillet. Stir-fry 1 to 2 minutes. Stir in Thai basil leaves and scrambled eggs.
- Garnish individual servings with additional Thai basil leaves and lime wedges.
