Katsudon Sauce

- 1½ tablespoons soy sauce
- 1 tablespoon brown sugar
- 1½ tablespoons cooking sherry or soju
- ¼ teaspoon salt
Oil for deep frying
- ½ cup flour
- 1 cup Panko breadcrumbs
- 2 eggs, divided
- 1 (12-ounce) can SPAM® Classic, cut into 4 slices
- 1 teaspoon oil
- 1/4 cup sliced onion
- 1/4 cup sliced leeks
- 4 cups cooked Japanese rice
Katsudon Sauce

- In small microwaveable bowl, combine sauce ingredients. Microwave on HIGH (100%) 30 to 40 seconds or until heated and sugar is dissolved.
FOR SPAM® KATSU

- In medium saucepan over medium-high heat, heat oil to 360°F. Place flour, breadcrumbs and 1 egg in separate shallow bowls. Lightly beat egg. Dredge SPAM® with Cheese slices with flour. Dip in egg and coat with breadcrumbs.
- Fry in oil until golden brown. Slice and set aside.
FOR SPAM® KATSUDON
- In medium skillet over medium heat, heat oil; cook onion and leeks 2 to 3 minutes or until tender. Top with sliced SPAM® katsu.
- Beat remaining egg. Pour over sliced SPAM® katsu. Pour Katsudon Sauce over sliced SPAM® katsu. Cover; simmer 30 to 45 seconds or until egg is cooked through.
- Serve on rice.
