Ingredients
  • 1 (12-ounce) can SPAM® Classic, cut into cubes and sautéed
  • 1/4 cup onion, chopped
  • 1/4 cup tomato, diced
  • 1/4 teaspoon dried oregano leaves
  • 5 large eggs
  • 1/4 cup milk
  • 1/8 teaspoon pepper
  • 1 (8-ounce) can refrigerated crescent roll dough
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced ripe olives
Directions
  1. Heat oven to 375°F.
  2. To make the crust, unroll the dough and separate into triangles.
  3. In a cast-iron skillet or 12-inch deep dish pizza pan, place the dough triangles with points toward the center.
  4. Press together the triangles to cover the bottom and 1/2 inch up the side of the skillet.
  5. Bake for 10 minutes.
  6. Meanwhile, in a bowl, whisk together eggs, milk, oregano, and pepper.
  7. Once the 10 minutes are finished, carefully pour the egg mixture over the crust.
  8. Bake for 10 more minutes or until the egg mixture is almost set.
  9. Sprinkle the egg mixture with the SPAM® Classic, tomato, olives, onion, and cheese.
  10. Bake for another 3 to 5 minutes or until the cheese melts.
  11. Cut into wedges and enjoy.

I made a crustless version this morning in an 8x8" baking dish and it was a hit. Will also be easy to bring to work and re-heat through the week. My oven took longer than directed to bake the eggs solid. It would be easy to customize with other favorite pizza toppings, but the recipe as given has a great "classic" pizza taste. I used Less Sodium Spam.
